Winemaker's notes: This crispy, fruity Sauvignon is made from grapes grown in a single vineyard in the Binyamina region and hand-harvested during August, 2006. The grapes were brought to the winery in the early hours of the morning and were immediately crushed and chilled. The wine then underwent a slow cold fermentation process at a temperature of 11°. This process contributes to retaining the unique fruitiness and aroma inherent in this variety.
The wine's aroma is one of grapefruit and tropical fruits with shades of passion fruit, peach and guava. The winery produced a limited number of bottles with this label due to the small grape yield in this quality vineyard.
Sauvignon Blanc is best served well chilled, together with savory fish dishes.
