Wally’s was honored to host Salvatore Ferragamo of Il Borro Wines as he shared some of his winery’s incredible new offerings. From limited-edition syrah, to high-scoring bottles, to a multi-course dinner pairing, Wally’s guests were treated to an exclusive selection of food and wine.

The evening began with a flight of recent releases from Il Borro. The winery is located near a 1,000-year-old medieval village, at the foot of a mountain range that provides a wide diversity of soils for growing grapes. The winery has spent years determining which soils are best for each grape variety, and has planted in the region to get the best results for each wine.

The first tasting of the night was Lamelle Chardonnay, a light, unoaked white wine with fresh flavors of peach, herbs, and lemongrass. Next was Il Borro ‘Pian di Nova’, a syrah/sangiovese blend, displayed lovely notes of dried flowers and herbs, with soft, supple tannins. Finally, the latest release of the flagship red blend, 95-point 2017 Il Borro, was a knockout with rich plum notes, vanilla spice, and velvety tannins.

Following the tasting, dinner guests were seated in the private dining room for a multi-course dinner paired with a selection of special Il Borro wines, including the limited-release 2015 Alessandro dal Borro in a magnum, and the 97-point 2015 Il Borro.

Bluefin Tuna Carpaccio, prosciutto toscano, summer truffle, and wild arugula, paired with:

• 2018 Il Borro ‘Pian di Nova’ (92 Points)
• 2017 Il Borro ‘Petruna’ (94 Points)

Second course

Rotisserie Breast of Veal, wood oven roasted figs, cippolini onion, and sweet corn puree, paired with:

• 2015 Il Borro (97 Points)
• 2017 Il Borro (95 Points)

Third course

Grilled Lamb Loin, stuffed baby tomato, charred eggplant & summer vegetables, paired with:

• 2015 Il Borro ‘Alessandro dal Borro’ Syrah (96 Points)
